Herbed Cornish Game Hen

Ingredients

2 Cornish game hens
2 tablespoons butter or margarine, melted
2 garlic cloves, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh basil
1/2 teaspoon salt
1/2 teaspoon rubbed sage
1/2 teaspoon dried thyme
1/4 teaspoon lemon-pepper seasoning (optional)

Directions

Place hens, breast side up, on a rack in a shallow roasting pan. In a small bowl, combine the remaining ingredients. Brush over hens. Bake, uncovered, at 350 degrees F for 50-60 minutes or until juices run clear.
I added carrots and potatoes turning it into on one dish dinner.

One of the things I enjoy are the stories and picture I get from my customers about there pets.

Here is a picture of Bunny now 6 years old and her chubby baby picture.

Bunny had an accident in May she was running after her ball at the park, fell, twisted, and was paralyzed from midspine back. Lots of acupuncture, water therapy, rehab and she’s walking now. She still has a ways to go but she is making progress all the time. She’s a trouper.

Love them…and so do Henry, Homer and Katie

Don’t have time to make cookies, give this simple recipe a try.

Chocolate Chip Pie

2 eggs
1/2 cup all-purpose flour
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup butter, melted
1 cup semisweet chocolate chips
1 cup chopped pecans
1 (9 inch) pie shell

Preheat oven to 325 degrees F (165 degrees C).

In large mixing bowl, beat eggs until light and foamy. Add sugar, brown sugar and flour and beat until well blended. Blend in melted butter. Stir in chocolate chips and nuts. Pour into pie shell.
Bake at 325 degrees F (165 degrees C) for 1 hour. Remove from oven. Serve warm with whipped topping or ice cream

Meet Beemer the goodwill ambassador at BMW of Asheville located in Asheville, NC. She has raised just over $8000.00 for the Asheville Humane Society with a goal to raise $10,000.00 by the end of the year. I met Beemer and her Mom Joey last week at Yappy hour put on my the Asheville Humane Society. We took our Katie (bullmastiff) with us and she had her picture taken with Beemer. Not sure how happy they were about the photo.
