2 cups chopped fresh broccoli

½ cup sliced mushrooms (optional)

1 (9 inch) unbaked deep dish pie crust

1 cup shredded cheddar or mozzarella cheese.

½ cup Parmesan cheese

4 eggs, well beaten

1 1/2 cups milk

1 teaspoon salt

1/2 teaspoon black pepper

Preheat oven to 350 degrees F.

Over medium-low heat melt butter in a large saucepan. Add onions, broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and toss with cheese.

Combine eggs, flour, milk. (I like to use a blender) Season with salt and pepper. Pour egg mixture over vegetables and cheese.

Garnish with slices of tomatoes, chopped bell peppers or olives.

Bake in preheated oven for 35 minutes, or until center firm.

  1. Paula, That looks fantastic!!! I can’t wait to try it. You need to publish a cookbook!!! I would buy one!!

  2. This does look yummy! How would it be without the crust asks the lady on the South Beach diet? Would that make it a frittata?

Maggie, We have Frittatas sometimes on Sundays here is a recipe I use but with some changes it could be a South Beach Fritta. : )

    • Sliced tomato
    • 1 tablespoon chopped parsley leaves
    • ½ grated cheese of you choice (cheddar, provolone, or mozzarella)

In medium size bowl, using a fork, blend together eggs, milk, Parmesan, pepper, and salt. Heat non-stick, oven safe sauté pan over medium high heat. Add butter to pan and melt. Add veggies, pasta and ham to pan and sauté for 2 to 3 minutes.
