Fast and Easy Vegetable Quiche


2 tablespoons butter or olive oil

½ cup onion, diced

2 cups chopped fresh broccoli

½ cup sliced mushrooms (optional)

1 (9 inch) unbaked deep dish pie crust

1 cup shredded cheddar or mozzarella cheese.

½ cup Parmesan cheese

4 eggs, well beaten

1 1/2 cups milk

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon flour

Preheat oven to 350 degrees F.

Over medium-low heat melt butter in a large saucepan. Add onions, broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and toss with cheese.

Combine eggs, flour, milk. (I like to use a blender) Season with salt and pepper. Pour egg mixture over vegetables and cheese.

Garnish with slices of tomatoes, chopped bell peppers or olives.

Bake in preheated oven for 35 minutes, or until center firm.

  2. This does look yummy! How would it be without the crust asks the lady on the South Beach diet? Would that make it a frittata?

    Maggie, We have Frittatas sometimes on Sundays here is a recipe I use but with some changes it could be a South Beach Fritta. : )
    • 6 eggs, beaten
    • ¼ cup milk
    • 2 tablespoons Parmesan, grated
    • salt & pepper
    • 1 teaspoon butter
    • ½ cup chopped asparagus or broccoli
    • ¼ cup chopped onion or green onion
    • ½ cup chopped country ham (omit ham add more veggies)
    • ½ cup left over pasta or sliced cooked potatoes
    • Sliced tomato
    • 1 tablespoon chopped parsley leaves
    • ½ grated cheese of you choice (cheddar, provolone, or mozzarella)
    Preheat oven to broil setting.
    In medium size bowl, using a fork, blend together eggs, milk, Parmesan, pepper, and salt. Heat non-stick, oven safe sauté pan over medium high heat. Add butter to pan and melt. Add veggies, pasta and ham to pan and sauté for 2 to 3 minutes. Pour egg mixture top with sliced tomatoes cook for 5 to 6 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle with parsley.
    Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy remove from oven top with grated cheese.
