Curry Lentil Soup

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, chopped
- 4 stalks celery, chopped
- 4 carrots, peeled and chopped
- 1 bell pepper (I like using sweet bell pepper.)
- 1 medium baking potato, washed and diced
- 5 cups vegetable broth
- 1 1/2 cups uncooked lentils
- 2 teaspoons curry powder
Directions
- Heat the oil in a stock pot over medium heat. Add the onion, garlic, carrot, potato, bell pepper and celery; cook and stir until tender. (chop all vegetables the same size)
- Add vegetable stock, lentils and curry powder. Simmer over low heat, covered, until lentils are soft, about 45 minutes.
