Curry Lentil Soup



  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, chopped
  • 4 stalks celery, chopped
  • 4 carrots, peeled and chopped
  • 1 bell pepper (I like using sweet bell pepper.)
  • 1 medium baking potato, washed and diced
  • 5 cups vegetable broth
  • 1 1/2 cups uncooked  lentils
  • 2 teaspoons curry powder


  1. Heat the oil in a stock pot over medium heat. Add the onion, garlic,  carrot, potato, bell pepper and celery; cook and stir until tender. (chop all vegetables the same size)
  2. Add vegetable stock, lentils and curry powder. Simmer over low heat, covered, until lentils are soft, about 45 minutes.
