Healthy can be quick and tasty.

Boneless Pork Chops with Spinach Mushroom Gravy.

4 lean boneless pork chops    

1/2 chopped medium onion

1 can low fat cream of mushroom soup

1 cup of chicken stock

1 cup chopped fresh spinach

Brown pork chops in skillet add onions cook until translucent add cream of mushroom soup, chicken stock and simmer for 20 minutes.  Add chopped spinach remove when spinach is welted.

I served this over my potato cauliflower mashed potatoes and steamed broccoli.

Optional – Fresh mushrooms can be added with onions.
